How this work helped shape America
Born enslaved in Virginia in 1847, William G. Payne emerged from slavery to build a career in the food-service industry, beginning a catering business in Philadelphia before relocating to Lancaster, Pennsylvania. There he established a restaurant and catering enterprise at 27 East Orange Street and developed a reputation that led to his service as caterer and steward for the Hamilton Club. In 1906, Payne expanded his business by establishing the Lancaster Kitchen & Caterers' Supply Company, which he operated until approximately 1914. His career transformed freedom into sustained entrepreneurship spanning catering, restaurant operations and the commercial supply side of the hospitality industry.
